Description: At MacDuff 1890, we source top quality, grass-fed cattle, sheep and pigs from a selection of trusted farms in the Scotland, supplying tender, succulent and ready-to-cook meat to high-end butchers and chefs in Scotland, UK and further afield.
We’re a fourth-generation family firm that is based at our plant in Wishaw. Andrew Duff now runs the company. Each morning Andrew handpicks the beef, lamb, mutton and pork for all the day’s orders according to each customer’s specification.
We have been selling quality mutton since 2020. They generally come into us between 4-6 years of age, having lived out a happy retirement out on the lush grasslands of Scotland. The meat is complex, gamier in flavour than lamb, and more beef-like in texture. The carcase is hung for at least two weeks and the result is a juicy, well-flavoured meat, firm but not tough.
There has recently been a real trend back to top-end restaurants and Michelin star chefs using quality mutton. We want to ensure that our independent retail butchery customers are also able to offer quality mutton to the general consumer to cook at home.
